High intensity sweeteners are considered to be potential organic contaminants due to their widespread use in food, drugs and health products. They are introduced into the environment from different paths and are introduced into the water (1).

The cause of the pollution is the extreme persistence resistant to water treatment processes due to the continuous introduction in the aquatic environments, in particular for the Aspartame present especially in winter (2).

As for human health, Aspartame was recently (2014) tested in concentrations equal to those found in soft drinks, but, at least in this study, no interference was found on the aryl receptor and on the glucocorticoid receptor (3).
