Bancha is a variety of Japanese green tea, considered one of the most common and everyday teas in Japan. It is known for its slightly more robust taste compared to other green teas like sencha.

Bancha is produced from tea leaves harvested later in the season, often from the second or third harvest of the year. These leaves are generally larger, thicker, and less tender than those used for sencha, resulting in a lighter and less astringent flavor.

Habitat and Cultivation

Bancha is cultivated throughout Japan, with cultivation techniques similar to those of sencha. The main difference lies in the timing of the harvest, which occurs later in the season.

Industrial Production Process

  • Harvesting. Bancha is harvested after Sencha, generally from summer to autumn. It uses more mature leaves and sometimes even stems and young branches of the tea plant.
  • Steaming. As with Sencha, the harvested leaves are briefly steamed immediately after harvesting. This process deactivates enzymes and prevents oxidation, keeping the leaves green and preserving antioxidant properties.
  • Drying and Rolling. After steaming, the leaves are dried and rolled. The rolling of Bancha is less refined compared to Sencha, resulting in larger leaf sizes and a less uniform shape.
  • Final Drying. The leaves are then fully dried to reduce moisture content and improve preservation. This step also defines Bancha's characteristic flavor.
  • Selection and Grading. After drying, Bancha is selected and graded based on quality, flavor, and appearance. The selection removes any lower quality leaves and unwanted materials.
  • Packaging. The selected Bancha is packaged in sealed containers to maintain freshness and organoleptic properties until consumption.

Nutritional Properties and Benefits

Although bancha has a slightly lower content of catechins and caffeine compared to sencha, it still offers a good dose of antioxidants (1). It is valued for its relaxing properties and its ability to aid in digestion.

Uses

Daily Consumption: Bancha is often consumed daily in Japan, served both during and between meals.

Base for Other Teas: Sometimes bancha is used as a base for flavored or blended teas, like genmaicha (bancha mixed with puffed rice).

Environmental Impact

The cultivation of bancha shares the same environmental considerations as other green teas, with an impact that can vary depending on agricultural practices. Organic cultivation of bancha is on the rise, reducing the use of pesticides and chemical fertilizers.

Conservation

Bancha should be stored in a cool, dry place, away from direct light and sources of odor. An airtight container helps to maintain the freshness of the tea.

Abstract. Bancha is a popular type of green tea in Japan, rich in tea polyphenols (TPs) and has a more astringent aroma with a less aromatic and strong character that complements functional foods. The blanching process is used to extract TPs and remove unwanted microorganisms, as well as inhibit phenolic oxidation. This study proposed a green tea blanching process followed by spray drying the extracts with maltodextrin. Furthermore, it is focused on maximizing the major chemical components of green tea (i.e., catechins, caffeine, and phenolic contents) based on powder particle size obtained through Multiple Response Surface Methodology optimizations. The results show that the proposed model accurately predicts leached-spray dried green tea's total catechin and caffeine content, with a coefficient of 0.9475 and 0.8692, respectively. This process yielded composite desirability of 0.9751, while individual desirability yielded excellent results of 1.0000, 0.9188, 1.0000, and 0.9839 for catechin, caffeine, phenol content, and powder. The settings appear to yield functional results for entire responses. Due to the concerns in tropical skin nutrition applications, smaller particle size green tea can promote better adsorption than larger sizes.
