Ergosterolo è stasto scoperto nel 1889 da un fungo della segale, è un componente principale della membrana plasmatica dei funghi

E' il principale sterolo che si trova nei funghi prataioli champignon o Agaricus bisporus. Si trova in natura in oli vegetali, frutta secca, cereali e bacche. Gli steroli più comuni sono beta-sitosterolo, campesterolo e stigmasterolo (1).

E' un precursore biologico  della vitamina D che può essere convertito in vitamina D2 dai raggi UVB (2). D2 può aumentare la sensibilità all'insulina, abbassare la glicemia e ridurre le complicazioni cardiovascolari del diabete (3).

Ha proprietà antitumorali e anti angiogeniche, ma è scarsamente solubile. E' un fitosterolo importante (4).
