Grana Padano cheese

Grana Padano is a hard, cooked-curd Italian cheese made from cow’s milk, characterised by a granular texture, a relatively mild flavour when younger, and a progressively more intense taste with longer ageing.

Its production involves milk coagulation, breaking and cooking the curd, shaping, salting, and subsequent ageing, during which the cheese loses water and develops its typical firm and granular structure.

From a nutritional point of view, it is a concentrated food, particularly rich in high-quality protein, calcium, and phosphorus.

Milk proteins provide all the essential amino acids and contribute to the maintenance of muscle mass and body tissues.

Grana Padano also provides vitamin B12, riboflavin, zinc, and other micronutrients naturally present in milk and concentrated during ageing.

As maturation progresses, lactose is progressively broken down, reaching very low levels in aged cheese.

An important nutritional aspect to consider is its content of salt and saturated fat, as is typical of hard aged cheeses.

Uses in Cosmetics

Grana Padano as a food product is not normally used directly in cosmetic formulations.

However, proteins, peptides, and other milk-derived ingredients may be used in cosmetics for their conditioning, film-forming, and emollient properties.

They may be found in creams, cleansers, soaps, shampoos, conditioners, and skin- and hair-care products.

Some milk protein derivatives may temporarily contribute to surface film formation and to the sensory characteristics of cosmetic formulations.

Food-grade Grana Padano should not, however, be considered equivalent to standardised milk proteins, peptides, or cosmetic derivatives.

Allergens

Grana Padano contains milk and milk proteins, which are major food allergens and must be declared on food labels.

It is therefore not suitable for people with milk protein allergy.

Some productions may also use egg-derived lysozyme, which represents an additional allergen and must be declared when present.

Ageing greatly reduces the lactose content, but milk allergy and lactose intolerance are different conditions.

People with egg allergy should therefore check the label carefully for the possible presence of egg-derived lysozyme.
