Lime juice powder
Lime juice powder is an ingredient obtained from the juice of lime (Citrus × aurantiifolia or related species, family Rutaceae) through concentration and drying, often by spray-drying.
Since lime juice naturally contains a high proportion of water, carriers such as maltodextrin, gum arabic or other carbohydrates are often used to facilitate drying and improve stability.
It is used to provide foods with acidity, citrus aroma and lime flavour, especially in beverages, desserts, snacks, baked goods, sauces, seasonings and instant preparations.
The main naturally occurring acid is citric acid, which is responsible for its characteristic tartness.
It may also contain small amounts of flavonoids and other aromatic compounds, although their concentration depends on the production process.
During drying, some of the vitamin C naturally present in the juice may be lost, particularly depending on temperature and storage conditions.
From a nutritional point of view, its composition depends greatly on the actual proportion of lime juice and on the presence of any added carriers.
It should therefore not be considered nutritionally equivalent to fresh lime juice, particularly when a substantial proportion of the powder consists of maltodextrin or other carriers.
Calories
It provides approximately 300–380 kcal per 100 g, although the value can vary considerably depending on the amount of carriers used. At normal use levels, its caloric contribution to the finished product is generally modest.
Allergens
Lime is not among the major food allergens requiring mandatory declaration in the European Union. Rare individual reactions to citrus fruits may nevertheless occur.
Assessment
An ingredient mainly useful as a natural acidifying and flavouring agent, although its nutritional value depends heavily on the actual proportion of lime juice and any added carriers.
Ingredient verdict: useful for providing lime acidity and flavour, but nutritionally limited when it contains high amounts of carriers.
