Nisina è un peptide cationico di piccole dimensioni, un antimicrobico naturale prodotto da batteri che appartengono alle specie Lactococcus e Streptococcus e interagisce con la membrana citoplasmatica ed i suoi componenti fosfolipidi.

Industrialmente si presenta in forma di polvere bianca.

A cosa serve e dove si usa

Medicina

E' un battericida contro le specie di Salmonella, batteri Gram-positivi, Clostridium difficile, ampiamente utilizzato dall'industria farmaceutica. E' utilizzata per il controllo dei biofilm (1). Tuttavia la sua instabilità e la sua bassa solubilità in acqua limita il suo uso.

Alimentazione

E' un composto chimico, un ingrediente inserito nella lista degli additivi alimentari europei come E234, con funzione di conservante in particolare nei formaggi e nei cibi in scatola. E' approvata dalla Food Drug Administration per l'utilizzo come additivo alimentare (GRAS).
