Levan is an amphiphilic, renewable and biocompatible fructose homopolymer with a marked adhesion capacity, low viscosity and compatibility with surfactants and salts. It is produced by microbial fermentation by microorganisms (yeasts, bacteria, fungi) and some plant species. It has a high solubility at room temperature in water, which may increase in hot water, but is insoluble with most organic solvents except dimethyl sulphoxide. It has a decomposition point at 225°C.

What it is used for and where
Cosmetics
Film-forming agent. It produces a continuous ultra-thin film with an optimal balance of cohesion, adhesion and stickiness on the skin or hair to counteract or limit damage from external phenomena such as chemicals, UV rays and pollution.

Skin protectant. It creates a protective barrier on the skin to defend it from harmful substances, irritants, allergens, pathogens that can cause various inflammatory conditions. These products can also improve the natural skin barrier and in most cases more than one is needed to achieve an effective result.

Viscosity Enhancing Agent - non acqueous. Since viscosity is important for increasing the chemical and physical stability of the product, Viscosity Enhancing Agent non acqueous is an important dosage factor in gels, suspensions, emulsions, solutions. Increasing viscosity makes formulations less sedimentary and more homogeneously thickened.
